Yesterday, I had the chance to go to Chuy's Redfish Ralley to get a taste of what Chuy's restaraunt, slated to open in Louisville in October, is all about. Being from SoCal, I have been on a mad hunt for any kind of authentic tasting Mexican food and I think Chuy's may just fit the bill (I say this after scarfing down as much of their yummy creamy jalepeno sauce with fresh nachos.)

One of the things that I discovered and have great respect for is the fact that they want to find a way to integrate their original Austin philosophy with local Louisville flavor. Caroline Knop, who did the PR for this event, led me to several people, one of whom was Chuy's Director of Marketing Ashley Ingle. Through speaking with them and several others, I learned of the history behind Chuy's and their culture of community, authenticity and the importance of keeping things simple. Good food and good fun shouldn't be complicated. They pledge to ensure that their customers get their fill of great food made with fresh ingrediants, low-key decor and a little bit of Elvis. The evening was summed up nicely by Mike Molestino, the local investor who is helping to bring Chuy's to our grand city, and a little music from the King. Who says that Elvis is dead?

Although the grand opening is not slated until October, I'd recommend that you check out their web site at chuys.com or go to their Louisville Facebook page. Chuy's will be located at the old Bahama Breeze located on Oxmoor Ct.
