Corner Cafe in Lyndon is hidden away in a shopping center by the train tracks. It looks deceptively small from the outside, but once you step inside you'll see room after room of tables and event spaces. More friends and acquaintances than I know have held events in these spaces, and I've been to many of them.
This place also holds a special place to me, because my husband worked in the kitchen there for nearly eight years. This meant that throughout our college years, I was fortunate enough to dine on pizza, pasta, subs, salads, and other favorites while my friends were stuck with Ramen. I've tried almost everything on the menu at this point, and it never gets old. Some of my favorites include the barbecue chicken pizza, the nuclear sub, and their award-winning shrimp and grits.
Whenever I'm feeling nostalgic, I stop in for a bite. On a recent trip I tried the app de chef, which was steamed mussels in a white wine cream sauce served with crostini. It was amazing- the mussels were perfectly cooked and the sauce was flavorful without being overwhelming.
My husband had one of my other favorites- the brie and pecan salad with blackened chicken. Start off with a bed of spinach and romaine, add a pile of melted brie, and top with cajun roasted pecans for the straight menu version. Then we add blackened chicken for a perfect dinner meal. The mix of savory, salty, creamy, and crunchy make this one of my favorite salads of all time.
I, of course, had my favorite shrimp and grits in red eye gravy. It's technically an appetizer, but it's what I always order for my entree. This recipe has won Taste of Derby.
