Friese’s look at Heartland cooking focuses on supporting local farmers and creating sustainable, delicious cuisine. In A Cook’s Journey, he travels through thirteen states in the Midwest sharing recipes and exploring local incarnations of the Slow Food movement. Friese is a restaurant owner of twelve years and the editor-in-chief and co-owner of the seasonal local food magazine Edible Iowa River Valley.
