As a twenty-something living in Old Louisville, I have a few friends of the vegan persuasion. I am a firm carnivore, but I have considered trying the vegan thing for a week or so, just to see if I could do it. There are many vegan foods I enjoy, but I know that I could never permanently alter my diet in that way, because of one thing I could never, ever give up: cheese.
The world of cheese is vast and magical. Varieties are endless, and the versatility makes it a possible addition to any dish, sweet or savory. Of all the cheeses, though, my absolute favorite is goat cheese. Luckily for me, and other cheese lovers, we have the multiple award-winning Capriole Farmstead in Greenville, Indiana which specializes in this delicious variety.
On the first Saturday of every month, you are invited to come out to tour the farm. Visitors can visit the barn with Luisa, the herdswoman, who will discuss the management of the animals, or you can check out the gardens with the very knowledgeable Kevin Hollis.
