    Kristina J. Addington was the first vegan to win the Food Network's Cutthroat Kitchen, and she's from Louisville. Back in August, when her winning episode aired, Addington told Louisville.com "Did you know that Louisville is one of the only cities of our size that doesn’t have an actual vegan restaurant? I’d love to break that trend….I’ll know in a few months what I’m going to do.”

    A few months have come and gone, and Addington (@Vegan Temptress on twitter) has decided what she’s going to do: she’s bringing a Southern-style vegan food truck to the ‘Ville. V-Grits will roll out November 2014, and will bring “stick-to-yo-ribs, southern-style, hearty, healthy, vegan comfort food on wheels” to Kentuckiana. 

    Addington explains her reasoning behind the food truck a little further here

    “I grew up with a family from the hollers of Appalachia, whose gatherings always revolved around food. Southern, country-cooking at its’ best. My family expressed love through feeding each other home-cooked meals, and I believe a lot of people shared that same experience.  That’s one reason ‘comfort food’ is so comforting. It reminds us of sitting around the dinner table with our family.

    I switched to a completely plant-based diet about 8 years ago. After learning and beginning to understand how much animals suffer in factory farms (did you know 10 billion animals are slaughtered in the US every year?), I chose to make a bold, but easy decision to no longer support that system…So now that my grocery cart looks like a scene from Veggie Tales, instead of longing for and missing out on all that old-fashioned comfort food, I'm recreating my favorite dishes with healthier ingredients, and sharing them with you, out of the V-GRITS food truck.”
