    It seems that cold weather has come back to Louisville and what better way to cheer yourself up about being confined indoors, than with some of the most perfect comfort food this city has to offer? We've rounded up our five favorite grilled cheese sandwiches in Louisville. You're welcome.

     

    Lil Cheezers | Fancy Pants
    The holy grail of all food trucks, this cheesemobile knows the way straight to my heart - melty cheese, warm and perfect after a long day, or a night out. The Fancy Pants is a sweet and savory twist on grilled cheese, stuffed with brie, apples, walnuts and caramelized onions.

     

    Toast On Market | Spicy Chipotle Grilled Cheese
    Cheddar, tomatoes, cilantro, red onions. Plus a smokey chipotle and molasses, for just a little bit of sweet. This is especially good on those Sunday “mornings” when you have to drag yourself out of bed and find the will to live. You can find it on a plate at Toast, with a side of that amazing hash brown casserole.

    Grind Burger Kitchen | Adult Grilled Cheese
    I’m a firm believer that kids know what’s best for our souls, not yet bogged down by things like “responsibility” and “clean eating.” That being said, our palates sometimes demand a little more than individually-packaged American cheese between two slices of white bread (that is somehow still good even though you bought it a month ago). To solve this problem, the fine folks at Grind have given us a grown up solution: the Adult Grilled Cheese. It’s a mix of brie and gruyere, grilled up with some carmelized onions on sourdough -- and a far cry from your school cafeteria’s single slice of bread with the single slice of cheese broiled on.

    Okay, so this one is actually a burger, but the buns are grilled cheese sandwiches. In case you’re unable to process that information, let me express it as an equation: grilled cheese + beef patty + another grilled cheese = delicious. It’s topped off with some greens, glazed onions and a spicy Russian dressing.

    Barrett Bar | Brisket Grilled Cheese
    You can get a regular grilled cheese here, but I highly suggest that any and all omnivores get it with the brisket. The meat is cooked perfectly, with an ideal meat-to-cheese ratio. This is arguably one of the best sandwiches in town. A side of cajun fries, and you’re good to go.
