    Spring is in the air and Josh Hillyard, executive chef at Equus, has wasted no time in taking advantage of the young season’s bounty. Each Tuesday night during the month of April Equus will be presenting an original special dinner created by Chef Hillyard that will feature ingredients described as “the region’s freshest.” Since Spring is when our collective “fancy lightly turns to thoughts of love” it’s only fitting that the special menu is a dinner for two. A five course tasting dinner that will be created fresh each week, the Tuesday night special costs $80 per couple plus tax and gratuity.

    It’s nice to know that even with all the attention and press Corbett’s: An American Place has been getting since it opened in December Equus, Dean Corbett’s original restaurant is still creating innovative meals and events. The St. Matthews eatery is a staple for creative dining in town and it’s wonderful to see it not be completely overshadowed by its younger sibling.

    While we’re on the topic of innovative meals at Equus, it’s exciting to note that for three evenings Dean Corbett will be offering Louisville locals a chance to enjoy the tastes and flavors of the meal he and three of his chefs (including Josh Hillyard of Equus) recently cooked at the prestigious James Beard House in Manhattan. On Thursday April 3, Friday April 4 and Saturday April 6 you can dine at either Equus or Corbett’s: An American Place and enjoy an eight course menu featuring dishes from the Beard House dinner for $75 per person plus tax and gratuity.

    The exact menu for the Beard House trip inspired dinners hasn’t been shared but we have the menu for the March 31 Beard House dinner and it should give you a good idea about the kind of dishes you can expect.

    Venison Loin with Sausage, Sorghum–Barley Risotto, Ramps, Pearl Onions, and Huckleberry Demi-Glace

    LaRue County Lamb with Potato, Foie Gras, Fiddlehead Ferns, and Truffled Lamb Jus

    Rhubarb–Thyme Creme Brulee with Hazelnuts and Earl Grey Ice Cream
