    ORLANDO, FL (October 28, 2004): The father and son team of Dick and Todd Barrett will open the first of at least four Tijuana Flats locations in the Louisville, Kentucky area. On Monday, November 8, the restaurants second expansion outside of Florida will open its doors to the public in Louisville at 2420 Lime Kiln Lane. This location will be contained in 2,400 square-feet of space seating over 70 inside and over 12 outside. In addition, the Snellville restaurant will comprise a hot bar with 12 Tijuana Flats world-famous hot sauces.

    This second out-of-state restaurant is under franchisees Dick Barrett (president) and Todd Barrett (vice president of operations. Dick Barrett has over 15 years as a Papa John?s franchisee for 35 locations and Wendy's franchisee for 13 locations throughout Kentucky. Through this, son Todd Barrett became involved by managing 10 of the Papa Johns locations in Indiana and 13 Wendy's locations in Kentucky, both for six years. Barrett plans to open at least four Tijuana Flats locations in Kentucky and Indiana, in which Todd Barrett will manage.

    "After our first visit to the Tijuana Flats location on 66th Street in St. Petersburg, Florida, we knew a concept such as Tijuana Flats would be a great element to bring to Louisville, Kentucky," stated Todd Barrett, Tijuana Flats Louisville franchisee. "This is such a fun and unique concept, allowing the guests to receive the ultimate fast-casual Tex-Mex dining experience. The atmosphere is not your usual Tex-Mex d'cor. And, what's even more unique about Tijuana Flats is that every menu item is cooked upon ordering. Our guests will only receive the freshest ingredients when they dine at Tijuana Flats."

    During the Winter Springs, Florida grand opening in May 2004, Tijuana Flats announced the company"s expansion into more than 40 new locations by the /files/storyimages/of 2006. This expansion includes markets outside of Florida including Alabama, Georgia, Indiana and Kentucky. Locations slated to open by the /files/storyimages/of 2004 are Brandon, Florida (located just outside of Tampa and an eighth location in theOrlando area.

    In October 2004, Tijuana Flats opened its first out of state location in Snellville, Georgia (located just outside of Atlanta) in a joint-venture partnership with restaurant pioneer Ray Stanjevich. Stanjevich has an extensive background in restaurant operations as an area director with Steak & Ale for 12 years. From there he's worked other Atlanta area restaurants, such as O'Charley's Restaurant as an area supervisor and Le Madeleine as director of operations. Stanjevich plans to open at least four Tijuana Flats locations throughout the Atlanta market.

    Tijuana Flats Burrito Company was founded in November 1995 by Brian Wheeler, who opened the first restaurant in Winter Park, Florida (located near Orlando). Today there are 19 Tijuana Flats restaurants operating in Deerfield Beach, Ft. Walton Beach, Gainesville, Jacksonville, Orlando, Pompano Beach, St. Petersburg, Sarasota and Tampa, Florida and Snellville, Georgia. The
    Louisville restaurant will be the restaurants 20th location.     Every Tijuana Flats menu item is cooked fresh every day and prepared upon ordering. The restaurant's average size is 2,200 square-feet with a check average of seven-dollars. The Tijuana Flats hot bar averages at least 10 rotating signature sauces.
